Anchored in the Breton countryside between Cancale, Saint-Malo and Mont Saint-Michel, Chef Maxence Rouault draws inspiration from the rich and varied landscapes of sea and land to create his delicately iodized gourmet cuisine.
His menu reflects this alchemy, offering fish, shellfish, poultry, salt-meadow lamb and market garden produce... The result is a range of fine gourmet dishes.
Particularly attached to the product and sensitive to environmental issues, the Chef and his brigade work in an eco-responsible way. Day after day, to the rhythm of the four seasons, the winds and the tides, Maxence Rouault rigorously selects the very best produce.
For his gourmet cuisine, he chooses the freshest local produce, often from short supply chains. He scrupulously respects the seasons to ensure that the produce is perfectly ripe, revealing its finest gustatory qualities.
